Skinny Jay’s Pizza was opened September 1, 2006 and is owned & operated by Jay Luckenbach & Matthew Moen.  Jay was formerly a co-owner in Fatty J’s Pizza. Fatty J’s Pizza was a household name for many years in Boulder, known not only for its excellent pizza, but also its other fine Italian dishes. The same recipes are used in Skinny Jay’s menu selections incorporating only the freshest ingredients available.

About the Owners

Jay Luckenbach was born and raised in South Florida and spent his early years living on a sailboat with his parents and two sisters. Water sports were his passion. At age 11 he moved with his family to Durango, CO. His passion changed from water sports to snow boarding. Jay returned to South Florida for college, where he worked part time learning the Italian restaurant business. In 1997 Jay and several partners opened Fatty J’s in Boulder.

Matthew Moen was born and raised in Minnesota.  He moved to Boulder, CO in 2000.  He started working at Fatty J’s Pizza in 2001.  He worked his way up as one of the managers of Fatty J’s Pizza.  Matthew is married to Kelly and they have a beautiful daughter.
